Cover the ribs with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
Preheat the grill to medium-high heat.
Remove the ribs from the refrigerator and let them come to room temperature for about 30 minutes.
Brush the grill grates with oil to prevent sticking.
Place the ribs on the grill, bone side down, and cook for 15-20 minutes, turning occasionally.
Reduce the heat to medium and continue grilling for another 30-40 minutes, basting with honey every 10 minutes.
Check for doneness; the meat should be tender and pulling away from the bones.
Remove the ribs from the grill and let them rest for 10 minutes before slicing.
Serve with lime wedges and additional jerk sauce on the side.
