Add 4 tablespoons of olive oil to a pan.
Chop or slice 1 onion and add it to the pan.
Add 4 sprigs of thyme and 2 small pieces of cinnamon leaf once the onion has caramelized.
Stir in 3 teaspoons of turmeric powder and mix well for about 8 minutes.
Add 2 cups of fresh coconut milk and 3 tablespoons of ginger garlic chili paste.
Cook the crab curry on medium low flame for about 20 minutes.
Squeeze the juice of 1 whole lemon into the curry, adjusting to taste.
Add chopped cilantro and cook for another 5 minutes, being careful not to overcook.
