Cut 10 pieces of parchment paper into 12cm x 12cm squares.
Soak dried blueberries in water for 1 hour.
Combine all dry ingredients in a bowl and mix.
Cover with a damp cloth and let rest for 15 minutes.
Fold the dough 10 times.

Fold the dough 5-6 times.
Let rest for 10 minutes.
Fold the dough 3-4 times.
Let rise until doubled or tripled in size, about 1 hour.
Divide the dough into 10 pieces of 95g each.
Shape into rounds and let rest for 20 minutes.
Shape the bagels (refer to the video for details).
Let rise for a second time for 30 minutes.
Boil water with sugar, then add bagels and boil for 10 seconds on each side.
Bake in a preheated oven at 210°C for 18 minutes.
