Prepare 4 cups of leftover cooked rice or cook 2 cups of jasmine rice, washing it 2-3 times and using slightly less water than usual for less stickiness.

Cut 250 g of boneless skinless chicken thighs into bite-sized pieces.

Season the chicken with 1 tsp soy sauce, 1 tsp mirin, 1 tsp corn starch, 1 tsp neutral oil, and a pinch of white pepper, then massage the seasoning into the chicken.

Crack 4 eggs into a small container, add a pinch of salt, and beat them well.

Thinly slice 3-4 green onions, separating the whites and greens.
