Coconut Saltfish

Add oil to a pan and heat it up.

While the saltfish is frying, add about 1 tablespoon of black pepper, 1 tablespoon of brown sugar, 2 crushed garlic cloves, and 2 chopped small tomatoes to the pan.

Add ketchup for acidity and sweetness while frying.

Slice a whole onion into big pieces and add it to the pan for crunch, letting it fry for a bit.

After frying, add coconut milk to the pan.
