Soak 1 cup of kebab wheat in water for about 30 minutes.
Chop 2 tomatoes into very small pieces.
Chop 1 cucumber into very small pieces.
Chop 1/2 onion into very small pieces.
Remove the wheat from the water and squeeze out the excess water.
Mix the chopped tomatoes, cucumber, onion, and 10 mint leaves together.
Add the juice of 1 lemon to the mixture.
Season with pepper to taste and salt to taste.
Add 1 bunch of chives and 1 bunch of parsley to the mixture.
Drizzle 1 tablespoon of olive oil over the mixture and mix well.
Decorate with lettuce leaves and serve.
