Prepare the filling by placing pork in a bowl.

3

Add about 1 teaspoon of garlic to the pork.

4

Chop spring onion into small pieces and add to the pork.

5

Add toasted sesame seed oil to the mixture.

6

Add fish sauce to the mixture, being careful not to add too much due to its saltiness.

7

Mix in the dried shrimp for added flavor.

8

Season the mixture with fresh cracked pepper, avoiding salt due to the fish sauce.

9

Take a dumpling wrapper and add a small amount of filling, ensuring not to overfill.

10

Add a little water to the edges of the wrapper to help seal it.

11

Pinch the edges of the wrapper to seal, pushing out any air as you go.

12

Prepare a dipping sauce by mixing sweet chili sauce, a little sesame seed oil, and fresh herbs (dill, mint, coriander).

13

Add a bit of white wine to the dipping sauce mixture.

14

Heat a pan with a little oil to start browning the dumplings.
