Pepperkaker, or Norwegian gingerbread, has roots in medieval Europe, where spices were a luxury. Traditionally made during Christmas, these cookies are often shaped into intricate designs and decorated. In Norway, families often bake and hang them as festive ornaments, celebrating the season with warmth and creativity. Today, variations abound, with many cultures adopting similar spiced cookies, but the Norwegian version remains a beloved holiday staple.

unsalted butter

Cream together plant-based margarine and all natural cane sugar.
Add smooth applesauce and vanilla extract to the mixture and mix well.
Add molasses to the mixture and mix again.
Sift together flour, corn starch, baking powder, salt, cinnamon, ginger, and all spice in a bowl.
Gradually add the dry ingredients to the wet mixture using a mixer.
Wrap the cookie dough in Saran wrap and chill in the refrigerator for at least 30 minutes.
Roll out the chilled dough using the Saran wrap to prevent cracking.
Cut out shapes using cookie cutters, including a gingerbread man, gingerbread girl, star, snowflake, snowman, and moose.
Bake the cookies on a silicone mat in the oven.
