Today we're cooking lamb loin chops on a Charbroil griddle.

First, season the lamb loin chops liberally with salt on both sides and let them sit for about 30 minutes to allow the salt to penetrate the meat.

Prepare the garlic herb compound butter: roast garlic by wrapping it in aluminum foil with olive oil and cooking it at 375°F for about an hour.

Use softened unsalted butter and mix in the roasted garlic, chopped fresh parsley, juice from half a lemon, and season with salt and red pepper flakes.
