Shrimp Scampi

12 oz raw shrimp
800g cauliflower
100g yellow onion
16 oz spinach
2 tablespoons butter
1 tablespoon dried parsley
1 teaspoon chili flakes
2 tablespoons parmesan cheese
2 tablespoons raw almonds
4 cloves garlic
1 lemon
2 cups fresh basil
1/4 cup + 2 tablespoons olive oil

Prepare the shrimp by thawing if frozen and peeling if necessary.

Chop the cauliflower into florets and the onion into small pieces.

In a large skillet, melt the butter over medium heat.

Add the onion and sauté until translucent, about 5 minutes.

Add the garlic and sauté for an additional minute until fragrant.

Add the cauliflower and cook until tender, about 5-7 minutes.

Stir in the spinach and cook until wilted.

Add the shrimp, cooking until they turn pink, about 2-3 minutes per side.

Season with salt, pepper, and chili flakes to taste.

Squeeze lemon juice over the dish and stir to combine.
