Thinly slice 2 medium-sized onions.

Finely chop 4-5 garlic cloves and a piece of ginger.

Heat 3-4 tablespoons of sunflower oil in a large flat pan.

Add the sliced onions and cook until they have some color, about 8-10 minutes on medium to low heat.

Add 1 stick of cinnamon, 3-4 cardamom pods, 2 bay leaves, and 1 teaspoon of cumin seeds; cook for another minute.

Prepare the chicken by using 8 chicken thighs and making a marinade with 150g of natural yogurt, 1 teaspoon of salt, 1 teaspoon of turmeric, 1 teaspoon of homemade garam masala, and 2 tablespoons of tandoori masala.

Add the marinated chicken to the pan and sear on high heat for about 10 minutes on each side until browned.

Wash 400g of basmati rice until the water runs clear.

Add the washed rice to the pan with the chicken and pour in 700ml of boiling water.

Cover and cook on low heat for 20 minutes, then let it sit for 5 minutes before fluffing with a fork.
