1 lb shrimp, cleaned, shelled and deveined
1/2 lb pork belly, cut into thin slices
1 large carrot, cut into small strips
1 cup green beans, diagonally sliced into small strips
1 cup snow pea
1 small red cabbage, cut into strips
1 large onion, chopped
1 head garlic, minced
1 tbsp oyster sauce
1/4 tsp pepper
1/4 tsp salt for shrimp
1/4 tsp salt for pork
2 tbsp olive oil for shrimp
2 tbsp olive oil for vegetables
8 oz vermicelli rice noodles
3 cups water
3 tbsp soy sauce
3 tbsp oyster sauce
1 tbsp brown sugar

Clean, shelled and deveined shrimp. Set aside the shrimp heads for the stock.

In a pan, heat oil over medium high heat.

Add shrimp, cook until pink. Remove from the pan. Set aside.

On the same pan, put olive oil.

Add onion and garlic.

Add pork, cook until it turns brown.

Add carrots. Cook for 30 seconds.

Add green beans and snow pea. Cook for 30 seconds.

Add red cabbage.

Add oyster sauce and pepper. Cook vegetables until tender crisp. Remove from pan. Set aside.

On the same pan, put 3 cups water, soy sauce, oyster sauce, brown sugar and pepper. Mix until sugar dissolves.

Add shrimp head. Bring to boil for 5 mins.

Remove the shrimp heads.

Add vermicelli noodles. Let it simmer while stirring until liquid is completely absorbed.

Turn off the heat. Add back the vegetables and shrimp. Mix together.
