Cut the chicken thigh into smaller pieces.
In a hot pan with a little oil, fry sliced potatoes until golden and slightly crispy.
Add chopped carrots to the potatoes and fry until softened.
Toss in green beans and add about a teaspoon of salt, cooking until they turn vibrant green.
Add bell peppers and toast lightly to bring out the aroma.
Remove all the vegetables from the pan and set aside.
In the same pan, add oil if needed and sauté chopped onions until soft and fragrant.
Add slices of fresh ginger and cook until aromatic.
Add eight cloves minced garlic and cook until garlic starts to turn golden.
Add sliced chicken and sauté until browned.
Season with a teaspoon of ground pepper and a pinch of salt.
Add 1 tablespoon of tomato paste, 5 tablespoons of soy sauce, and 2 tablespoons of oyster sauce, cooking for a minute.
Add enough water to cover the chicken and let it simmer until fully cooked and tender.
Return the toasted vegetables to the pan and stir gently to combine.
Add 2 and 1/2 tablespoons of fish sauce and 1 tablespoon of brown sugar, adjusting salt as needed.
Mix 1 tablespoon of cornstarch with 2 tablespoons of water, stir until smooth, and slowly pour into the pan while stirring.
Let it simmer for a few more minutes until the sauce becomes rich and glossy.
