Score the chicken using a sharp knife, making four long incisions in each chicken quarter.

In a large bowl, combine lemon juice, garlic, mace, paprika, cumin, cayenne, turmeric, half of the olive oil, and season with salt and pepper. Stir well to create the marinade.

Place all chicken quarters into the marinade and stir thoroughly to coat evenly. Marinate for at least 1 hour, up to 6 hours, covering and refrigerating if marinating longer than 1 hour.

Place the marinated chicken on the barbecue and grill for 15 to 20 minutes, turning every 5 minutes to cook evenly. Splash a little water on the barbecue to prevent flames from burning the chicken.

While the chicken is cooking, prepare the salad by adding tomatoes, onion, chopped parsley, oregano, sesame seeds, lemon juice, and the remaining olive oil into a large bowl. Season with salt and pepper and mix well.
