Preheat the oven to 375°F (190°C).
Dust the work surface with flour and roll out the pastry dough (store-bought or homemade).
Cut the dough into rectangles using a ruler and pizza roller.
Transfer the rectangles to a baking sheet lined with parchment paper or a silicone baking mat.
Poke holes in the top rectangles with a fork to allow steam to escape.
Warm the strawberry preserves in the microwave for about 35 seconds.
Spread the warmed strawberry preserves on the center of the bottom rectangle.
Place the top rectangle over the preserves and seal the edges with a fork.
Optionally, brush with egg wash for shine.
Bake for 18-25 minutes until golden brown.
Let cool completely before frosting.
Mix about 1.5 cups of powdered sugar with 3 tablespoons of milk and half a teaspoon of vanilla extract to make a thick glaze.
Spread the glaze over the cooled pop-tarts and add sprinkles.
