Start with the dry ingredients: sift almond flour and coconut flour to remove lumps.
Add 3/4 cup powdered erythritol to the sifted flours.
Add a pinch of salt and xanthan gum to the dry ingredients.
Transfer the dry ingredients to a food processor and pulse to combine.
In a separate bowl, crack one egg at room temperature.
Add melted unsalted butter and softened cream cheese to the egg.
Add 1 teaspoon of vanilla extract to the liquid ingredients.
Pulse the liquid ingredients in the food processor until a sticky dough forms.
Wrap the dough in plastic wrap and chill in the freezer for 10-15 minutes.
While the dough chills, prepare the filling by heating a nonstick skillet over medium heat.
Add 1 cup of frozen raspberries to the skillet and cook down with a little sweetener for about 5 minutes until thick.
Sprinkle xanthan gum over the raspberry mixture and mix well to thicken the filling.
Set the raspberry filling aside to cool while rolling out the dough.
Preheat the oven to 350°F (175°C) if not already done.
