Preheat oven to 375°F (190°C).
Take the dough out of the fridge and cut it in half for top and bottom crusts.
Cut the dough in half again to work with one crust at a time and keep the rest chilled.
Dust the countertop and rolling pin with flour to prevent sticking.
Form the dough into a ball, then flatten it into a disc for easier rolling.
Roll out the dough to about 1/4 to 1/8 inch thick, turning it to prevent sticking.
Use a wide mouth canning ring to cut out circles from the dough and place them on a baking sheet.
Gather the scraps, roll them out again, and cut out more circles to make a total of eight hand pies.
Take about 1 tablespoon of cherry pie filling and place it on the center of each circle.
Place a top piece of dough over the filling and press down to seal.
Make slits in the top crust to release steam during baking.
Crimp the edges with fingers and then with a fork to seal them further.
If the dough gets warm, place the tops in the fridge while working on the others.
Prepare an egg wash by mixing 1 egg with 1 tablespoon of cold water.
Brush the tops of the hand pies with the egg wash for a golden finish.
Sprinkle granulated sugar on top of the hand pies for texture.
Bake in the oven for 25 minutes until golden brown.
