Start by picking up 16 oz of your favorite fruit from the farmers market.
Add a little bit of lemon juice to the pot with the fruit.
Make a simple syrup with honey, sugar, and a little bit of vanilla beans.
Cook the fruit mixture until it reaches a nice fluid consistency.
Blend the mixture quickly in a blender.
Strain the blended mixture to remove seeds and any debris from the fruit.
Prepare the crust using a paper cutout of the desired Pop-Tart shape or use sheets with squares for easier cutting.
Roll out the dough on the paper to the desired thickness.
Spread the fruit filling on the dough, leaving edges clear to prevent bleeding out.
Use an egg yolk to crimp the edges of the Pop-Tart.
Transfer the Pop-Tarts onto a baking sheet lined with the same paper used for rolling out the dough.
Bake in the oven at 300°F for 20-25 minutes.
Once baked, prepare the topping with powdered sugar and a little cream or butter.
Spread the topping on the cooled Pop-Tarts and add sprinkles.
