The homemade version allows for creativity with fillings and toppings, making them a fun treat for any occasion. Today, variations abound, with flavors ranging from classic fruit fillings to decadent chocolate, appealing to a wide range of tastes.

Whole wheat flour adds fiber.
Cream together 1/2 cup coconut palm sugar and 1/2 cup coconut oil until thick and creamy.
Add 1 tablespoon flaxseed meal mixed with 3 tablespoons water and 1 teaspoon vanilla extract, mixing well.
Gradually add 1 3/4 cups Bob's Red Mill gluten-free biscuit baking mix and 1 teaspoon salt while mixing.
Add about 1 tablespoon of non-dairy milk to help the dough come together, then mix until well combined.
Wrap the dough in saran wrap and refrigerate.
Dice about 1 pound of fresh organic strawberries and reserve a couple for decoration.
In a pan, heat the diced strawberries over medium-high heat until they start to break down.
Add 1 cup coconut palm sugar, 1 tablespoon cornstarch, and 2 tablespoons water to the pan and mix well.
Once the mixture is boiling, remove it from heat and place it in a jar to cool in the fridge.
Line a surface with wax paper or parchment paper and roll out the chilled dough to about 1/4 inch thickness.
Preheat the oven to 350°F (175°C).
Cut the rolled dough into squares using a cookie cutter, about 2 inches by 2 inches.
Line a baking tray with parchment paper and spray with coconut oil baking spray.
Place a dollop of the strawberry jam in the center of each square.
Peel off another square of dough and place it on top of the jam-filled squares.
Use a fork to seal the edges of each pop tart.
Place the pop tarts in the oven and bake for about 15 minutes.
While the pop tarts are baking, prepare a raspberry glaze by heating frozen raspberries with 1 tablespoon of water over medium heat until defrosted.
Add vanilla stevia and cornstarch to the raspberry mixture and mix well.
