Parsley is a common herb that can substitute fresh coriander.
Roast the small baingan over an open flame until charred and soft, about 10-15 minutes.
Allow the baingan to cool, then peel off the skin and mash the flesh.
Heat oil in a pan over medium heat until shimmering.
Add the thinly sliced onion and roughly chopped onion; sauté until golden brown, about 5-7 minutes.
Stir in minced garlic, ginger, and green chili; cook for 2-3 minutes until fragrant.
Add chopped tomatoes (if using) and cook until soft, about 5 minutes.
Mix in coriander powder, red chili powder, and turmeric powder; cook for 2 minutes.
Add the mashed baingan to the pan and stir well to combine.
Season with salt and cook for another 5-7 minutes, allowing flavors to meld.
Sprinkle garam masala (if using) over the top and mix gently.
Garnish with fresh coriander leaves before serving.
