Chicken Salad Indian Style

5 chicken fillets
2 tbls yogurt
2 tbls tandoori paste
1 tbls mint sauce
1/2 tsp turmeric powder
Salt and black pepper
Lettuce
Grated carrot
Sweetcorn
Red pepper
Tomatoe
Jalapeños
Olives
Feta cheese
Croutons
Mayo
Ketchup

Marinate the fillets with yogurt, tandoori paste, mint sauce, turmeric powder, salt, and black pepper. Leave in fridge for 30mins or overnight.

Place fillets on a tray, drizzle with oil, and cook in oven at 180 degrees for 30mins or until chicken is done.

In a bowl, layer lettuce, grated carrots, sliced tomatoes, sweetcorn, and chopped red pepper.

Slice the cooked chicken into strips and add over the top of the salad.

Add olives, jalapeños, feta cheese, croutons, drizzle your favorite sauces, and sprinkle pumpkin seeds.
