Black Bean Brownies

1/4 cup avocado oil or coconut oil

1/2 cup carob chips
15 oz canned black beans
3/4 cup oat flour
1/2 cup carob powder
1 tsp Himalayan salt
2 tsp vanilla powder
1 tsp baking powder
3/4 cup maple syrup
3/4 cup water
1/2 cup carob chips

Preheat toaster oven to 350°F.

Add 1 1/2 cups cooked black beans to a blender.

Add 2 tbsp carob powder, 1/2 cup quick oats, 1/4 tsp sea salt, 1/2 tsp baking powder, 1/3 cup maple syrup, 1/4 cup avocado oil or coconut oil, 1 tsp vanilla powder, and a pinch of monk fruit extract or Stevia to the blender.

Blend until smooth.

Add 1/2 cup carob chips to the blended mixture and stir.

Grease an 8x8 brownie pan and pour the batter in, smoothing the top.

Press extra carob chips into the top of the brownies.

Bake in the preheated oven for 17 minutes.

Let cool for 10 minutes before slicing into 9 or 12 brownies.
