Black Bean Brownies

1/4 cup old-fashioned rolled oats
1 can black beans (or 1 1/2 cups cooked beans)
1/4 cup creamy raw almond butter
6 tablespoons cocoa powder
2 tablespoons ground flax seeds
1 teaspoon vanilla extract
1 cup coconut sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons apple cider vinegar
1/2 cup dark chocolate chips

Preheat oven to 350ºF.

In a large food processor, add 1/4 cup of old-fashioned rolled oats and process until they resemble a coarse flour.

Add 1 can of drained and rinsed black beans (or 1 1/2 cups cooked beans) to the food processor.

Add 1/4 cup of creamy raw almond butter to the food processor.

Add 6 tablespoons of cocoa powder, 2 tablespoons of ground flax seeds, 1 teaspoon of vanilla extract, 1 cup of coconut sugar, 1/2 teaspoon of baking soda, 1/4 teaspoon of salt, and 2 teaspoons of apple cider vinegar to the food processor.

Process everything together until a thick and smooth batter forms, stopping to scrape down the sides at least once.

Add 1/2 cup of dark chocolate chips and pulse briefly to mix them in.

Prepare an 8-inch baking dish by lightly spraying it with oil and pressing a piece of parchment paper inside.

Use a spatula to smooth the brownie batter into the prepared baking dish and sprinkle a few more chocolate chips on top.

Bake the brownies at 350 degrees for 30 minutes or until the center feels relatively firm to the touch.

Let the brownies cool completely for at least 2 hours before cutting them.
