Set up a water bath at medium heat.
Add 8 ounces of bittersweet chocolate to the heatproof bowl.
Add 3/4 cups of unsalted butter at room temperature to the chocolate.
Melt the chocolate and butter together until completely melted without burning or scorching.
Add 1 tablespoon of cocoa powder to the melted mixture and mix well.
Add 1 teaspoon of vanilla extract and 2/3 cups of sugar to the mixture and mix until well combined.
Add 5 beaten egg yolks and 1/2 cup of chopped toasted pecans to the mixture and stir.
Crumble 12 ounces of Maria cookies into the mixture, not super fine, and mix until combined.
Use your hands to mix until the texture is buttery, chunky, and gooey.
Take half of the mixture and shape it into a log on wax paper.
Twist the ends of the log to resemble a salami shape.
Place the shaped log in the freezer to chill for at least an hour.
Once firm, cover the log in confectioners' sugar.
