Soak chickpeas overnight in water.

In a pot, add soaked chickpeas, black cardamom, peppercorns, cardamom, cinnamon, cloves, bay leaf, dried gooseberry, salt, and water. Cook until tender, about 45-60 minutes.

Prepare the masala by heating oil in a pan, adding carom seeds, chopped garlic, ginger, and onions. Sauté until onions are golden brown.

Add turmeric, chili powder, coriander powder, cumin powder, and chole masala; stir for 2 minutes.

Mix in tomato puree and cook until the oil separates from the masala.

Add cooked chickpeas to the masala and simmer for 10-15 minutes, adjusting salt to taste.

For bhature, mix maida, semolina, salt, baking soda, baking powder, sugar, and yogurt in a bowl. Gradually add water to form a smooth dough.

Let the dough rest for at least 30 minutes.

Divide the dough into balls and roll out into circles.
