Gnocchi Soup

1 cup potato gnocchi
4 cups vegetable broth
1 cup diced tomatoes
1 cup chopped spinach
1/2 cup diced carrots
1/2 cup diced celery
1/2 cup chopped onion
2 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil
Salt to taste
Pepper to taste

In a large pot, heat olive oil over medium heat.

Add chopped onion, diced carrots, and diced celery. Sauté until the vegetables are tender, about 5-7 minutes.

Stir in minced garlic, dried oregano, and dried basil. Cook for an additional 1-2 minutes until fragrant.

Pour in the vegetable broth and diced tomatoes. Bring to a boil.

Once boiling, add the potato gnocchi and cook according to package instructions, usually about 2-3 minutes until they float to the top.
