2 cups chicken stock
1 cup heavy whipping cream
1 cup chopped spinach
2 cups gnocchi
1/2 cup shredded Monterey Jack cheese
1/2 cup freshly grated Parmesan cheese

Shred two boneless skinless chicken breasts using two forks.

In a large pot, add 2 tablespoons of extra virgin olive oil and 2 tablespoons of butter; turn the heat to medium.

Add the shredded chicken breast to the pot and stir to coat each piece in the oil and butter.

Add in 1 cup of diced onion, 1 cup of shredded carrots, and 1 cup of diced celery; season with salt, pepper, and 1 teaspoon of Italian seasoning.
