Chicken and Gnocchi Soup

2 chicken breasts, cut into 4 thin pieces
Thyme leaves

Garlic and herb seasoning
4 tbsp butter
1/2 a small onion, diced
3 celery stalks, diced
5oz shredded carrots
4 garlic cloves, minced
1/4 cup all purpose flour
2 cups heavy whipping cream
2 cups whole milk
3 cups chicken broth
16oz bag gnocchi
Handful baby spinach
Breadsticks, to serve

Melt the butter in a large pot over medium heat.

Add the diced onion, celery, and shredded carrots, and sauté until softened.

Stir in the minced garlic and cook for another minute.

Add the chicken pieces to the pot and season with thyme, salt, pepper, and garlic and herb seasoning.

Cook the chicken until browned and cooked through.

Sprinkle the flour over the chicken and vegetables, stirring to combine.

Gradually add the chicken broth, stirring to prevent lumps.

Pour in the heavy whipping cream and whole milk, and bring to a simmer.

Add the gnocchi and cook according to package instructions until they float to the top.

Stir in the baby spinach until wilted.
