Chicken and Gnocchi Soup

1 lb chicken breast cubed
2 cups fresh spinach
1/2 cup chopped celery
1/2 cup chopped onion
2 cups chicken broth
1 cup matchstick carrots
3 cups heavy cream
16 oz gnocchi
1 tsp salt
1 tsp pepper

Turn the instant pot onto the sauté setting.

Place the chicken, onion & celery into the bottom of the pot. Lightly spray with cooking spray & set to sauté mode until the chicken is browned.

Pour in the rest of the ingredients: chicken broth & carrots and mix well.

Place the instant pot lid on & seal shut.

Turn the instant pot onto high manual for a cooking time of 5 minutes.

Quick pressure release.

Turn the instant pot onto sauté.

Stir in gnocchi, spinach & heavy cream.

Boil & stir frequently for about 3-5 minutes or until the gnocchi float to the top.

Garnish with parmesan cheese.
