1 whole chicken breast (about 1 cup)
4 tablespoons unsalted butter
1 tablespoon extra virgin olive oil
1/4 cup all-purpose flour
1/2 quart heavy whipping cream
1/2 quart milk
2 cans (14.5 ounces each) chicken stock
1/2 teaspoon dried thyme (or fresh thyme)
2 cups packed fresh spinach (about a whole bag of baby spinach)

Heat a pan over medium heat.

Add 4 tablespoons of unsalted butter and 1 tablespoon of extra virgin olive oil to the pan.

Wait for the butter to bubble and then settle down without browning.

Add 1 cup of shredded carrot, 1/2 cup of diced celery, and 1 cup of diced onion to the pan.

Stir and cook until the onion becomes translucent.
