Shrimp Scampi

4 tablespoons butter
1/4 cup oil
1 cup diced onion
1 lime
1 teaspoon minced garlic
1 bunch fresh asparagus
1 pound large shrimp
1 cup heavy whipping cream
1/2 cup Parmesan
Chopped green onions for garnish
Salt
black pepper

In a large skillet on medium heat, melt butter and add oil.

Add the onions and sauté for a couple of minutes until translucent.

Add the garlic, lime juice, and asparagus. Cook for 3 minutes.

Add shrimp and cook for 3 minutes.

Push all to the sides of the pan and pour in the heavy whipping cream into the middle of the pan.

Bring to a boil to thicken, stirring frequently.

Turn off the heat and gradually add the Parmesan cheese, stirring well to melt the cheese and blend.

Fold in the asparagus and shrimp to absorb the sauce.

Serve the sauce on top of the pasta on a plate, garnished with chopped green onions.
