Nutritional yeast is dairy-free and adds a cheesy flavor.
Blanch spinach and squeeze out excess water.
Add 3 eggs and 1 egg yolk to the spinach and blend until smooth.
Pour fine semolina flour into a well created in the spinach mixture.
Knead the dough for about 3-4 minutes until combined.
Heat olive oil in a pan and add sliced onions and 1 clove of garlic; cook for 5-10 minutes.
Add kefla potatoes and cut green beans to the pan.
Chop broad beans, capers, and gherkins and add them to the mixture.
Add a bunch of chopped basil and the zest of 2 lemons to the pan.
Pour in vodka and a splash of seaweed dashie for seasoning.
Add chopped olives and anchovies to the pan with the onions.
Let the sauce simmer while rolling out the pasta dough into thin sausages and cutting them into pieces.
Boil salted water and cook the pasta for about 4 minutes until it floats to the top but still has a bite.
Drain the pasta and add it to the sauce mixture in the pan.
Add pecorino cheese and ricotta cheese to the pasta and mix well.
Finish with a drizzle of extra virgin olive oil before serving.
