soy sauce

Preheat a carbon steel wok at medium heat.
Add 2 tablespoons of cooking oil and move it around the wok.
Chop 2 tablespoons of ginger and 2 tablespoons of garlic.
Drop the ginger and garlic into the hot oil and stir fry for about 10 seconds.
Push the ginger and garlic to the outside edge of the wok.
Turn the heat setting to high.
Add the vegetables that cook the slowest first, starting with mushrooms and celery.
Use wrists and forearm to turn the vegetables, ensuring they are nice and dry before cooking.
Chop zucchini and add it to the wok.
Cut all vegetables to a similar size for even cooking.
Add 1 teaspoon of salt, adjusting to taste.
Add 0.5 teaspoon of sesame oil for flavor.
Add 1 teaspoon of light soy sauce, considering low sodium if sensitive to salt.
Add Chinese veggies like bok choy, cut slightly larger as they shrink during cooking.
Add 1 teaspoon of oyster flavor sauce for enhanced flavor.
Add Chinese barbecue sauce with honey.
Add 1 tablespoon of brown sugar for sweetness, or omit for a salty flavor.
Sample the cooking to check flavors.
Optionally, add 1 tablespoon of cornstarch mixed with 1/3 cup of water to thicken the sauce, or leave it unthickened.
