400 gm Extra firm tofu
1 Tbsp Toasted sesame seed oil
1 Tbsp Soy sauce
1 Tbsp cornstarch
1 Tsp Salt
1 Tbsp Cooking oil
½ Cup unsalted smooth peanut butter
½ Cup coconut milk
2 Tbsp Sriracha sauce
½ Tbsp Soy sauce
2 cloves of grated garlic
1 Tsp Salt
1 Tbsp Lemon juice
½ Cup of Vegetable broth
½ Cup of chopped green bell pepper
½ Cup of chopped red bell pepper
½ Cup of chopped carrots
⅓ Cup of chopped green beans
¼ Cup of broccoli
1 Tbsp Cooking oil
Green onions for garnish

Cut 400 gm of Extra firm tofu into triangles or square shapes.

In a mixing bowl, add 1 Tbsp Toasted sesame seed oil, 1 Tbsp Soy sauce, 1 Tbsp cornstarch, and 1 Tsp Salt. Mix it very well.

Add chopped tofu to the mixture and gently toss until they are coated.

Add 1 Tbsp Cooking oil to the pan and add the coated tofu. Pan-fry the tofu until it turns a light brown color.

In a mixing bowl, prepare the sauce by adding ½ Cup unsalted smooth peanut butter, ½ Cup coconut milk, 2 Tbsp Sriracha sauce, ½ Tbsp Soy sauce, 2 cloves of grated garlic, 1 Tsp Salt, 1 Tbsp Lemon juice, and ½ Cup of Vegetable broth. Whisk all together.

Transfer the pan-fried tofu to a plate and set aside for later use.

In the same pan, add 1 Tbsp Cooking oil and ½ Cup of chopped green bell pepper, ½ Cup of chopped red bell pepper, ½ Cup of chopped carrots, and ⅓ Cup of chopped green beans. Add ¼ Cup of broccoli and let it sauté for 3-4 minutes on low heat.

Add the peanut butter sauce to the sautéed vegetables and let it cook until the sauce thickens up.

Turn off the heat and add the pan-fried tofu to the sauce. Garnish with some green onions.

Serve with some sticky rice.
