Grape juice adds sweetness without alcohol, while beef broth is more budget-friendly.
Take the beef roast out of the refrigerator and let it sit on the counter for about 30 minutes to come to room temperature.
Preheat the oven to 425°F.
Make several slices into the beef roast, going with the grain.
Insert fresh garlic cloves with skins into the slices of the roast.
Generously season the roast with coarse ground black pepper and kosher salt.
Heat olive oil in a pan over medium-high heat.
Sear the roast in the pan for about 2-3 minutes on each side, including the edges.
Prepare a paste with 1 cup of mayonnaise, 4 tablespoons of grated horseradish, and about 5 cloves of fresh garlic.
Generously apply the mayonnaise-horseradish paste onto the roast.
Place the roast in an oven-safe roasting pan and put it in the preheated oven at 425°F for 20 minutes.
After 20 minutes, reduce the oven temperature to 325°F and continue cooking for about 1 hour.
Remove the roast from the oven and cover it with tin foil to let it rest for about 30 minutes before slicing.
