Homemade Tofu

Tofu has its roots in ancient China, but it has become an integral part of Indian vegetarian cuisine as well. Traditionally made from soybeans, tofu is celebrated for its versatility and ability to absorb flavors from spices and sauces. In India, it is often used in curries and stir-fries, making it a popular protein source for vegetarians. Homemade tofu allows for customization in texture and flavor, and it has gained popularity globally as a health-conscious alternative to meat.

1 cup soaked overnight red lentils
3 cups water
1 tsp turmeric
1 tbsp nutritional yeast

3 tbsp soy sauce
100ml white wine
1 tbsp maple syrup
juice of 1/2 lime
1 tbsp cornflour

Soak 1 cup of red lentils overnight.

Drain the soaked lentils and place them in a blender.

Add 3 cups of water to the blender with the lentils and blend until smooth.

In a pot, heat the blended lentil mixture over medium heat, stirring continuously.

Add 1 tsp of turmeric, 1 tbsp of nutritional yeast, salt, and black pepper to the pot and stir well.

Press gently to release air bubbles from the mixture, ensuring it is calm and even.

Let the mixture chill in the fridge for about 6 hours or overnight.

Prepare a baking sheet with olive oil and dust with corn flour.

Spread the lentil mixture onto the baking sheet and bake at 180°C for around 20 minutes.

In a separate bowl, mix 1/2 cup of cashew nuts, 15g of ginger, and 2 garlic cloves, then add 1 tsp of chipotle and 1 tsp of smoked paprika.

Stir in 3 tbsp of soy sauce, 100ml of white wine, 1 tbsp of maple syrup, and the juice of 1/2 lime into the mixture.

Add 1 tbsp of cornflour to thicken the mixture and stir well before serving.

Garnish with sesame seeds and fresh thyme before enjoying the homemade tofu.
