1 teaspoon salt
1/2 teaspoon white pepper
2 tablespoons all-purpose flour
5 Thai bird's eye chili
1 larger mild chili
4 cloves garlic
3 tablespoons oyster sauce
2 tablespoons fish sauce
1 tablespoon sugar
1 cup basil leaves
1/4 cup vegetable oil for frying

Remove the skin from the pork belly by making a slice just underneath the skin and then wiggling the knife between the skin and the meat to peel it off.
