Turnips and regular radishes are nutritious and often less expensive.
Harvest daikon radish and weigh it, needing about 1.5 pounds for the soup.
Peel the daikon radish and chop it into chunks.
Cut 1.5 pounds of pork into cubes.
Boil the pork in water for about 10 minutes to remove impurities.
Drain the water from the pork and replace it with fresh water.
Add the chopped daikon and one clove of smashed garlic to the pot.
Optionally add a thumb of ginger for flavor.
Boil for about 30 minutes or until the daikon is tender.
Serve with rice and garnish with cilantro.
For the salad, cut the remaining daikon into matchsticks and place in a bowl.
Add about 1 tablespoon of salt to the matchsticks and knead to soften them.
Let the salted radish sit for about 10 minutes to draw out moisture.
Chop spring onions and add to the softened radish.
Add 2 cloves of minced garlic to the bowl.
Rinse the radish to reduce saltiness and squeeze out moisture.
Mix in the spring onions and garlic, and add korean pepper flakes.
