Wash the prawns in salted water to clean them.

Use scissors to cut off the shrimp's legs and tentacles, and cut off part of the head to remove the insides.

Pull out the shrimp stomachs and intestines.

Open the back of each shrimp with a knife to check for residues.

Wash the cleaned prawns again to ensure no impurities remain.

Place the cleaned prawns in a bowl, add shredded ginger, chopped green onions, white pepper, and cooking wine.

Massage the ginger and scallions into the prawns to release their juices, then let marinate for 10 minutes.

After marinating, remove the ginger and scallions from the prawns.

Pour in half a bowl of starch water to thicken the sauce, stirring to coat the prawns evenly with the garlic sauce.
