1 cup oil
2 large onions
1/2 tablespoon cumin
1 tablespoon ginger-garlic paste
3 large tomatoes
1/2 tablespoon turmeric
1/2 tablespoon coriander powder
1 tablespoon red chili powder

mixed vegetables (peas, potatoes, carrots, cabbage, bell pepper)
3 tablespoons vinegar

Heat 1 cup of oil in a handi (a type of pot).

Fry cashews in the oil for 20 to 25 minutes until they start to turn golden brown, then remove them from the oil.

Add 2 large sliced onions to the oil and fry them lightly, avoiding dark color since this is a vegetable biryani.

Add 1/2 tablespoon of cumin to the onions and fry for a bit.

Add 1 tablespoon of ginger-garlic paste and fry until the raw smell goes away, about 3 minutes.

Add 3 large chopped tomatoes and cook until they soften.

Stir in 1/2 tablespoon turmeric, 1/2 tablespoon coriander powder, and 1 tablespoon red chili powder, adjusting salt to taste.

Add mixed vegetables: peas, diced potatoes, and carrots, and mix well.

Add chopped cabbage and cover to cook for 5 to 7 minutes until the potatoes are tender.

Stir in 3 tablespoons of vinegar and adjust salt as needed.

Drain the soaked basmati rice and add it to the pot with the vegetable mixture.

Add chopped bell pepper and green onions, then mix in 1/2 cup of yogurt to prevent curdling.

Sprinkle garam masala and chopped fresh cilantro over the mixture.

Add food color and spread fried onions on top.

Drizzle some ghee or butter over the top, cover, and cook on low heat for 7 minutes until the biryani is ready.
