Instructions

  1. 1Boil potatoes in salted water until tender, about 15-20 minutes.

  3. 3In a bowl, combine flour, baking powder, salt, and black pepper.

  5. 5Gradually add water to form a soft dough, knead briefly.

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, chilled and diced
  • 6-8 tbsp ice water
  • 2 cups cooked chicken, shredded
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1/2 cup chicken broth
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 egg, beaten (for egg wash)

Instructions

  1. 1Preheat the oven to 425°F (220°C).
  2. 2In a large bowl, combine the flour and salt. Add the diced butter and mix until the mixture resembles coarse crumbs.
  3. 3Stir in the ice water, a tablespoon at a time, until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 30 minutes.
  4. 4In a separate bowl, mix the shredded chicken, mixed vegetables, chicken broth, black pepper, garlic powder, and onion powder until well combined.
  5. 5Roll out one disc of dough on a floured surface to about 1/8 inch thick. Cut into circles to fit your pie dish.
  6. 6Place the dough circles into the pie dish and fill with the chicken mixture.
  7. 7Roll out the second disc of dough and cut into circles to cover the pies. Seal the edges by crimping with a fork.
