Instructions
- 1Boil potatoes in salted water until tender, about 15-20 minutes.
- 2Drain and mash the potatoes until smooth.
- 3In a bowl, combine flour, baking powder, salt, and black pepper.
- 4Add butter and mix until crumbly.
- 5Gradually add water to form a soft dough, knead briefly.
- 6Cover the dough with a cloth and let it rest for 30 minutes.
- 7Meanwhile, heat oil in a skillet over medium heat.
- 8Sauté onions and garlic until translucent, about 3-4 minutes.
- 9Add mashed potatoes, green onions, cayenne pepper, and season with salt and pepper.
- 10Mix well and remove from heat; let filling cool slightly.
- 11Divide dough into small balls and roll each into a circle.
- 12Place a spoonful of filling in the center of each circle.
- 13Fold the dough over the filling and seal the edges with a fork.
- 14Heat oil in a deep fryer to 350°F (175°C).
- 15Fry each pie until golden brown, about 3-4 minutes per side.
- 16Remove from oil and drain on paper towels.
- 17Serve hot, with lime wedges on the side.

- ●1/2 tsp salt
- ●1/2 cup unsalted butter, chilled and diced
- ●6-8 tbsp ice water
- ●2 cups cooked chicken, shredded
- ●1 cup mixed vegetables (peas, carrots, corn)
- ●1/2 cup chicken broth
- ●1/2 tsp black pepper
- ●1/2 tsp garlic powder
- ●1/2 tsp onion powder
- ●1 egg, beaten (for egg wash)
Instructions
- 1Preheat the oven to 425°F (220°C).
- 2In a large bowl, combine the flour and salt. Add the diced butter and mix until the mixture resembles coarse crumbs.
- 3Stir in the ice water, a tablespoon at a time, until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 30 minutes.
- 4In a separate bowl, mix the shredded chicken, mixed vegetables, chicken broth, black pepper, garlic powder, and onion powder until well combined.
- 5Roll out one disc of dough on a floured surface to about 1/8 inch thick. Cut into circles to fit your pie dish.
- 6Place the dough circles into the pie dish and fill with the chicken mixture.
- 7Roll out the second disc of dough and cut into circles to cover the pies. Seal the edges by crimping with a fork.
- 8Brush the tops of the pies with the beaten egg to give them a golden color when baked.
- 9Cut small slits in the top of each pie to allow steam to escape.
- 10Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
- 11Let the pies cool for a few minutes before serving.
