Wash and soak half a cup of tur dal overnight, then drain.
Pressure cook the tur dal with garlic cloves and shallot onions.
Make tomato pickle by finely chopping 2 large tomatoes and sautéing them in 1 tablespoon mustard oil with a sprinkle of salt.
Cover the tomatoes to soften them, then add spices including 1/2 teaspoon Kashmir red chili powder and 1/8 teaspoon each of dry roasted cumin seeds and mustard seeds powder.
Finish the pickle with a tablespoon of mustard oil and 1/4 teaspoon mustard seeds, allowing them to splutter, and add a pinch of hing.
Peel and chop 3 small tender sweet potatoes, then air fry them at 190°C for 20 minutes with oil spray.
Prepare pallet papu by heating 1 tablespoon oil and adding 1 chopped medium-sized tomato until soft.
Add 2 handfuls of palak leaves and cover until soft, then mix in the cooked tur dal and adjust water consistency.
Add 1/8 teaspoon turmeric powder, 1/2 teaspoon green chili paste, salt to taste, and 1 teaspoon homemade garam masala, along with tamarind pulp.
Make a tka with 1 tablespoon oil, 1/2 teaspoon mustard seeds, and 4 chopped garlic cloves until golden and aromatic, then add shallot onions.
