Take one teaspoon of sugar and mix it with two tablespoons of yeast in one cup of lukewarm water, set aside for 15 minutes.
Scald one cup of milk in the microwave for about four minutes until it rises and has scum on top.
In a mixing bowl, combine half a cup of sugar and one teaspoon of salt with the scalded milk and one stick of room temperature butter using a mixer.
Once incorporated, add two eggs one at a time.
Add the risen yeast mixture to the dough gradually.
Incorporate flour, starting with five cups and adding more as needed, mixing until the dough leaves the sides of the bowl.
Knead the dough to develop gluten until it forms a ball, then let it rise in a warm place for about one hour until doubled in size, covered with a towel.
Turn out the dough onto a floured surface, divide into pieces, and let them rest for 20-30 minutes.
Prepare the filling with cooled potatoes and cheese, placing a portion in the center of each dough piece, sealing well.
Roll out the dough to about a quarter of an inch thick and place on a sheet pan.
Bake in a 350°F oven on the bottom rack for 15 minutes and then on the top rack for an additional 10-15 minutes, checking for browning.
