Ackee and Saltfish Seasoned Rice

Heat some coconut oil in a pot.

Add garlic, onion, bell peppers, and tomato to the pot and stir.

Add salt fish to the pot, which has been cooked to remove excess salt.

Add pumpkin and carrot to the pot.

Pour in some water and coconut milk to cook the pumpkin until it mashes a little.

Cover the pot and cook the pumpkin; use a fork to crush some of it if desired.

Add green seasoning, a blend of herbs, to the pot.

Add pimento, scallion, and thyme, then stir.

Add seasoning, usually a soup mix without noodles, and black pepper.

Taste the liquid to see if more seasoning is needed.

Add washed rice to the pot and stir it in.

Check if more liquid is needed and add more water or coconut milk if necessary.

Add cooked aki and scotch bonnet pepper to the pot; you can use two peppers if desired.

Cover the pot and let the rice cook.

Fluff the rice and serve.
