Using homemade yogurt can be a cost-effective way to start.

Transfer whole milk to a saucepan and heat over medium heat until it comes to a boil, watching for it to rise quickly to prevent spilling.

Once boiling, turn off the heat and allow the milk to cool down to about 120°F (49°C).

Pour the cooled milk into a clean pot that has been washed in hot water to ensure it's bacteria-free.

Add about 3 tablespoons of shop bought yogurt to the milk and mix until well combined.

Cover the pot with its lid.

Preheat the oven to 100°F (38°C), then turn it off.

Place the covered pot in the oven and let it sit overnight (approximately 24 hours) to ferment.

The next morning, check the yogurt for consistency and flavor, then reserve about 2 tablespoons for the next batch.
