Thinly slice 2 carrots.
Chop 1 cup of fresh green beans and half of a zucchini.
Chop 2 stalks of celery into chunkier pieces.
Dice half of a yellow onion and 2 golden potatoes.
Mince 4 cloves of garlic.
Prepare vegetable broth by mixing 5 cups of hot water with 1.5 tablespoons of better than bullion.
Heat 2 tablespoons of butter in a sturdy bottom pot over medium-high heat until melted.
Add the diced onion and zucchini to the pot, season with a little salt, and sauté for about 4-5 minutes until soft.
Add minced garlic and sauté for an additional 30 seconds to 1 minute until fragrant.
Transfer the sautéed onion and zucchini mixture to a blender and blend until smooth.
In the same pot, add 2 tablespoons of light olive oil and the ground beef, spreading it around to get color on the bottom.
Season the ground beef with 0.5 teaspoon salt, 1 teaspoon paprika, 2 teaspoons sage, a few dashes of pepper, and 1 tablespoon Worcestershire sauce.
Cook the ground beef for about 4-5 minutes until browned, stirring occasionally.
Add the chopped carrots and celery to the pot, cover with a lid to help cook through faster.
After a minute, check the meat, then pour in the prepared vegetable broth, diced potatoes, 1 tablespoon Italian seasoning, and 1 teaspoon salt.
Add the can of diced tomatoes and stir everything together, then cover and let simmer at a low boil for about 10 minutes.
After 10 minutes, add 0.5 cup gluten-free macaroni, 1 cup cut green beans, and 2 cups baby spinach to the pot, stirring gently.
Cover and simmer for another 10-12 minutes until pasta is al dente.
After simmering, optionally stir in 1 tablespoon of lemon juice for brightness.
Serve the soup garnished with shredded Parmesan cheese and torn fresh basil leaves.
