Fry the bacon and remove from pan. Keep the fat.

Add the stick of butter, half of the bacon back, slivered, and add the onions and cook until translucent.

Pour the whole thing into a bowl and set aside.

Peel and grate your potatoes super fine, it should be like applesauce when you are done. Make sure your potatoes are as dry as possible before grating.

In a big bowl, put your potatoes in and add the onion and fat mixture to the potatoes and stir in.

Then add in the milk (warm first, not boil, just warm) and mix in well.

Then add in the eggs, and they should be beaten first.

Salt and pepper to taste. This dish does better with a bit more salt, so if your bacon isn't very salty, sprinkle the top with salt when it comes out of the oven.

Pour the whole thing back into the cast iron skillet (I used a Lodge 10 inch for this).

Bake in a 375 degree oven for half an hour and then reduce the heat to 350 and bake for an additional hour or until solid in the middle and tests clean and done.
