Peel potatoes and place in ice water to keep them crispy.

In a large bowl, mix together the grated potatoes, onion/bacon/grease/butter mixture, hot milk, eggs, salt, and pepper.

Bake at 450°F for about 45 minutes until the bottom and edges start to brown, then reduce the temperature to 350°F and bake for an additional 1-2 hours until golden brown and a toothpick comes out clean.
