Brown the ground beef in a skillet over medium heat.
Add 1 teaspoon of onion powder and 1 teaspoon of garlic powder to the beef.
Add about 1 teaspoon to 1.5 teaspoons of sazon and a tablespoon of sofrito to the mixture.
Boil 1 medium potato, cut it, and add it to the beef mixture.
Stir in the salsa and mix everything together until combined.
Take a goya disk and place about 1 to 1.5 spoonfuls of the meat filling in the center.
Fold the disk over to create a half-moon shape and pinch the edges to seal.
Use a fork to crimp the edges for extra sealing.
Heat a pot with vegetable oil or corn oil, filling it about half full.
Deep-fry the empanadas for about 2-3 minutes on each side until golden brown.
