Zest of 1 lemon
1 whole chicken (4 lb)
3 Tablespoons canola oil
Fresh lemon juice from ½ lemon
Chopped green onion

To make marinate sauce, combine first 8 ingredients through lemon zest in a large bowl and stir. Add chicken into marinate sauce, cover and refrigerate overnight.

Preheat oven to 425 degrees. Heat oil in a large skillet over high heat swirl to coat.

Place chicken on a large skillet, cook 5 minute each side or until the skins are crispy.

Pour remaining marinate sauce bring to boil then bake at 425 degrees for 20 minutes or until chicken is done.

Sprinkle with lemon juice, chopped green onion and cilantro. Serve with lemon wedges.
